Method Description:

Lipids are extracted from food stuffs by conventional Mojonnier techniques. The resulting residues are then transesterified to form fatty acid methyl esters (FAMEs). The FAMEs are then quantitated using capillary column gas chromatography.

Lipids are unbound from food samples by acid or base hydrolysis and extracted into mixed ethers. The fatty acid containing compounds are then interesterfied to form fatty acid methyl esters and free sterols. The components are separated and analyzed using a capillary column on a gas chromatograph.
