Method Description:

Damaged starch granules release free starch molecules that are susceptible to hydrolysis when treated with alpha-amylase enzyme. This hydrolysis reaction releases reducing sugars that are quantitated via titration. This value indicates the amount of starch in the sample that is damaged by milling or other processes.


Information Required by Submitter:

Please provide estimates for samples containing high (> 20%) damaged starch content. The method changes slightly samples with high damaged starch content.
