Method Description:

Sample is heat shocked at 100C for 30 minutes and plated on selective media (Dextrose Tryptone Agar (DTA)) and incubated anaerobically (without oxygen) at 55C for 48 hours.

This is a method to determine anaerobic thermophilic sporeforming organisms that contaminate food ingredients and may cause spoilage in thermally processed low-acid foods (pH>4.6).
